After laborers flocked from China to Peru in the mid-1800s, a blend of Chinese and Peruvian cuisine known as Chifa was born. Ham El-Waylly is here to show us his simple version of arroz chaufa, or fried rice, which uses a base of chicken thighs and red bell pepper. The key to this recipe is keeping the cooking surface hot. That may be easy to achieve when using a powerful wok burner in a professional kitchen, but at home, this means cooking in smaller batches.

How do you make them less crispy? My favorite croissants when I lived in France did not have so much shattering crispiness on the outer shell.
Chifa is the name of Chinese food in Peru. Chaufa is exclusive to Peru because of the large migration of Chinese immigrants to the country. please do your research it’s not hard to find!!!!!!!!

Is it just me or do most "baked ziti" recipes not use ziti but some other pasta instead lol? Do most people not like ziti?

Cumin? Noooooo. It should be "canela china" (Chinese cinnamon). Some restaurants add sesame seeds but not red peppers. I've seen the peppers, peas and even hotdog in "menus" (restaurants that only serve lunch options at an affordable price)
I tried this recipe as someone who has never really baked pastries that didn't come out of a can. Made mistakes at every step; adding too much water because mix looked dry, didn't trim ends between folds so they were uneven, butter squeezed out, left in freezer overnight because I forgot about it, didn't get a good rise. Still didn't turn out horrible, little dense but better than store bought. Will try again in a few months.

one of the most difficult and hard hit sectors during the last 2 decades was the nyc yellow cab. They are almost non-existent. Where a sea of yellow cabs used to zip up and down park ave in the 90s, and every tourist wanted to experience the rush of zipping up park ave within minutes, is practically finished. The city killed the medallion amongst other things. This video was a great reminder of the respite found for cabbies during a very busy and stressful day. Not knowing if the lease would be made or not by the end of the week, but the feeling of being able to fill the belly and find some spiritual peace with prayer could help one keep going. Beautiful and insightful video. Thank you.
I'm so grateful for this recipe. It's so easy but soooo delicious and it's very filling but verrry low calorie. Perfect perfect!
Terrific! Ham is excellent and the tip about cast iron actually being better for home stir frying than a wok…seems so logical and right.
You should also check out Kenji Alt-Lopez' fried rice video. He gave out three methods to get that wok hei in a home setting

Chaufa is the rice, Chifa is the hybrid of peruvian-chinese dishes.
just went down the wikipedia rabbit hole of chifa cuisine (and peruvian cuisine in general) - i can't believe i was so ignorant on this topic, really fascinating!

I think the difference between Peruvian and Chinese versions is that the Chinese use more rice.

I made this, accidentally added 1/2 a Table spoon not tea spoon off baking soda.. its in the oven rn, hopw i dont poison myself.
Growing up poor and many times we did not have much food to make from scratch, we made Chinese rice and it was not much different than this, only made with leftovers and some fresh veggies.
Yess more ham content!!
